Guess what, it may not be a big deal to you, but it is to us, S. is walking around the house now without crutches! He's still using his scooter at work and places where he has to walk longer distances, but is able to walk slowly using his boot. I have to say it was a bit weird at first to have him up and walking around the kitchen helping cook and doing little things around the house and yard, but I have to say I love it. So our weekend was normal because we actually ran errands together, cooked together, and worked around the house. (It's so nice to have a husband that's getting more mobile again.)
To celebrate S.'s birthday, we made food from Ecuador(where he served his mission). He choose to make ceviche(fish "cooked" in lime juice with chopped shallots, peppers, lime, cilantro, garlic, and tomatoes) with fried chifles(plantains). We went to whole foods to buy the fresh fish, and I was a bit shocked by the price(16.99 a lb for fresh halibut and that was on sale), but it was worth it. Just the smell alone, brought S. back to his mission, and the 1st bite even brought a little tear to his eye. I'm just glad it actually tasted the same as he remembered. It was also fun to spend the afternoon cooking in kitchen together.
Squeezing all the 20 limes by hand...
All the ceviche and fried plantains...
For dessert, S. wanted "slimer cake" that he used to eat when he was a kid. It's cake topped with vanilla pudding that is dyed green to make it look like slimer from ghostbusters. We didn't even use the food coloring and it didn't look all that appetizing, but it was yummy. N. helped me with the cake and loved saying "happy birthday, daddy" all day long.
My sweet boys...
